Fundamentals of Cake Decorating

Skill Level: Foundation

During Fundamentals of Cake Decorating, you will learn:

~Discover a wide variety of tools used to bake and decorate special- occasion cakes.
~ Learn how to properly bake a cake and make true Italian Buttercream Icing
~ Level, tort, fill and dirty ice a cake in a quick and efficient manner.
~ Practice decorating techniques including how to properly ice a cake, and learn how to pipe buttercream garnishes.
~You will also learn how to write and print on a cake, pipe borders, flowers and leaves.

At the end of this course, students will take home their own 8" cake to show off what you have learned, as well as your own high end Whisk Cake Company Apron !

Intermediate Cake Design- Focus On Fondant

Skill Level: Intermediate
Course requirements: Previously taken our Fundamentals course or have taken previous decorating courses.

Join us for this fun and instructive class as you will build on your previously learned skills in this * decor only class.
During this course, you will:

~ Making Italian Buttercream from scratch, and find out why it's the best medium to work with out of the buttercream family
~ Leveling/ Torting of cakes as well as structural needs and requirements to guarantee a secure tiered cake
~ Introduction to Fondant and comparing the good and bad of each brand that is available on the market, as well as home-made fondant to help you figure out what works best for you!
~ Tricks of the trade from a teacher currently in the Cake Design Trade on how to easily use Fondant.
~ Stenciling, Overlays & Inlaying
~ Texturing, Marbling and the use of silicone molds
~ Making Royal Icing and learn why its the perfect secret weapon

* Please note that there is no baking in this class- If the student would prefer to work on a real cake, we require that the student bring 2- 6" round cakes and 2- 8" round cakes. Please make sure that these cakes are torted, filled and dirty iced.Cakes are required to be placed on cardboard cake boards. Please note that these cakes need to be seperate and not stacked on each other.

All enrolled students will receive a binder with information that we go over in class, as well as recipes that you can take home with you. We also have a  growing retail section where you will be able to purchase some of the hard to find tools and products that we use in class. All students will receive a 15% off discount during your scheduled classes that can be used in purchasing these items, or any other items that you find!
Class Information, Policies & Registration


~Full payment is required at the time of registration for each and every class.

~If payment is via cheque, the entire class fee is due fourteen (14) days prior to the start of the first class.

~ Class fees may be paid in person with cash, cheque,Interac, or by major credit card.
~ NSF cheques will result in a fee of $45.
~ All deposits & fees are forfeited for no shows.


Cancellation Policies:

If for any reason Whisk Cake Company should cancel a class, a transfer to a later class or full refund will be offered to the student.

If a student cancellation is received within fourteen (14) days prior to the start of the first class, a credit note less a $20 administration fee will be issued. This credit note can be applied to future classes and will expire after three (3) months from the date of issue. Students cancelling within 48 hours will not receive a refund, or will not be able to switch to a different class, unless otherwise stated by Whisk Cake Company. If we are able to fill your spot with someone from our wait-list, other arrangements will be made depending on each circumstance. No-shows will not receive a refund.

Whisk Cake Company reserve the right to cancel a class due to low enrollment up until 4 hours before the class date. We reserve the right to change class schedules or adjust necessary fees without prior notice. If a cancellation or changes occur, a full refund will be given to students.

Full classes will have a waiting list. Please contact us directly if you would like to be added to the waiting list.

Unfortunately we cannot provide "make-up" classes for any missed material or sessions, so please be sure to attend all sessions in their entirety.

Registrations fees cannot be transferred to another class.

Should you be sending someone else in your place, please be sure to contact us so that we can have the appropriate name badges and paperwork in order.

Classes will begin on time, so please be sure to allow enough time to arrive and prepare prior to the start of the class. Every attempt will be made to keep the class running smoothly and on time, however some classes may run over, so please plan accordingly. Every attempt will be made to cover all of the material outlined in the class description. However in some cases, it may be necessary to change the class outline due to time limitations and/or other unavoidable situations.

Cameras are allowed in class, however please check with each instructor prior to use. Video and voice recording devices is not permitted during class. Those found to be recording will be asked to leave. For the consideration of our instructors and other students, we ask that you refrain from posting step-by-step in progress pictures of our classes & the material covered.

For the consideration of fellow students and the instructors, please be sure to quiet all cell phones and personal devices.

All tools and equipment will be supplied for use during each class, unless otherwise noted in the class outline.Please be prepared with all the items needed for the class. If you are not prepared with all items, you may miss out on a particular technique. Items must be purchased prior to class start; it is disruptive to the class to have students running in and out of the class to purchase items. Please be sure to bring a pen, paper and an apron to each class.

Please be sure to wear comfortable clothing and closed toe shoes. Flip flops and other open sandals are not permitted in our kitchen. In order to maintain Health & Safety standards, if you have long hair please keep it tied up for the duration of the class.

All full day classes will include a lunch break where you are welcome to bring in your own luch or leave for the break time alloted, unless otherwise noted in the class outline.

All classes are taught in English.

Students must be 16 years of age or older unless otherwise stated. We will also allow teens that we have personally met and talked with to make sure that they are capable and mature enough to be in the class.

All of our classes will be held at the Whisk Cakes Production Bakery located on 203 Rutland Road North, Kelowna BC Canada.
In order to guarantee that we have placed you in the proper class (and to not hold up other members of the class) we would prefer to meet with you when registering for a class. We will then be able to explain the supplies that are needed prior to the course, suggest locations in which to best find these items, and to make sure that the class and instructor will be a perfect fit to your needs.

Free parking is available directly in front of Whisk Cakes (203 Rutland Road) if available. There is also parking across the street in Rutland Centennial Park as well as our own private parking lot located directly behind the building. If parking in this area, please do not park in the lane way between our building and the one next door as it is a fire lane.
Whisk Cakes is not responsible for any loss of items in your car while taking classes with Whisk Cake Company so please take due care and attention when leaving your car parked.



Advanced Cake Design- Sculpting 3-D Cakes

Course requirements: Whisk Cakes Intermediate Cake Design Course

This in depth class goes over the fundamentals and tricks of sculpting 3-D cakes! From the best types of cakes and fillings to use when sculpting cakes, to how to make that first initial cut, you will walk away with a realistic looking 3-D sculpted purse cake to take home and enjoy! We will be supplying the cakes and icings for this class, so please make sure to let us know of any allergies!

Some additional supplies required such as:

* Small and large off-set spatulas
* Serrated Paring Knife

Cake Pop Classes

This fun and exciting class is returning for another year...and why not? Its the most fun you can have for a couple of hours!!!

In this fun and extremely hands-on class, you will learn the basics on how to properly make the newest fad to hit the cake world- Cake Pops!

From fun little tricks-of-the-trade, to where to purchase supplies when making them at home, this class will open your eyes to this wonderful little treat on a stick!

Fundamentals of  Sugar Flowers Class

Skill Level: Intermediate
Course Requirements: Whisk Cakes Intermediate Cake Design- Focus on Fondant Class and have also done some work with making sugar flowers.

The student taking this class must have some previous experience working with fondant and gumpaste in order to truly enjoy this advanced class!
Since this highly requested class is focused on various Gum Paste or Sugar Flower making, and will not have anything to do with working with cakes, we guarantee that you will fall in love with the hand made Gumpaste flower!

In this class, you will learn:
~ What is the difference between fondant & gumpaste, and when to use each medium as well as the comparison of different brands of each.
~ Wired and unwired sugar flowers, and which ones are which.
~ Once completed, you will go home with: Calla Lilies
                                                                                        Lilac Bushes
                                                                                        Rose Buds
                                                                                        Hydrangeas

Supplies Required for this class:

* Cutters for the above flowers, except the lilac bushes

Advanced Gum Paste Flowers Class-
Both Classes 1 & 2, as well as "Design & Production"

Skill Level: Advanced
Course Requirements: Whisk Cakes Intermediate Gumpaste Flower Class and have also done some work with making sugar flowers.

This class is an in-depth and fast moving class meant for students with previous sugar flowers experience looking to learn the professional way of making stunning, realistic sugar flowers!

Building on our previous sugar flower class, you will learn more technical techniques and tricks for making more advanced sugar flowers including advanced wired flowers and painting techniques

In this class, you will learn:
~ Wired flowers and how to make professional looking sprays with leaves
~ How to paint your flowers and leaves using food grade petal dust, and how to shade your colors to give them a realistic look.
~ Please see the Class Schedule for the list of sugar flowers that you will be making in that specific class!

Chocolate 101


Featuring the incomparable, Chef Danny Capadouca- Chocolatier/ Owner of Aether Chocolates, and Pastry Instructor at Okanagan College.

Chef Capadouca comes with years of experience creating chocolate show pieces, high end competition desserts and so much more around the world, and we are very honored that he has chosen Whisk Cake Company to teach us some of his tricks of the trade!

This fun and exciting class is for anyone that likes to make and work with chocolate, and is interested in learning how to work and create professional looking treats!

In this fun and extremely hands-on class, you will learn the background of chocolate, and how it is made. Most importantly, you will be able to see and taste the difference between your local gas station chocolate bar, coating chocolate, and more high end chocolate such as Valrhona (and taste the different ones available...thats worth the money right there!!!), and what differentiates them from one another.

In class, we will learn how to properly temper chocolate, why you should do this, and how to work with white, milk and dark chocolate. By the end of the class, you will go home with your own beautifully packaged bags of Chocolate Bark that you will make yourself, along with your own bag of amazing Valrhona Chocolate (hopefully it makes the drive home without eating it all!)  and a Whisk Cake Company pinstripe apron!

"The Art of Bringing Sugar Flowers to Life"
Featuring Rosanne Jennens, Chief Coloring Officer at Whisk Cake Co

Skill Level: Beginner

This fun and hands-on  coloring class has been brought to our roster this year after many of you have requested it....so.....here you go!

In this class, you will learn Rosanne's tricks to bringing some color and life to your sugar flowers!
In class, you will be supplied with 3 different types of sugar flowers (handmade by our talented Whisk Cake Co Staff!)- Calla Lilies, Vanda Orchids, Roses and leaves. These flowers will be pre-made for you, and will be ready for you to color them!
You will learn Rosanne's tricks to using our FAV product- The Sugar Art's Elite Colors to dry brush or paint your flowers, and tricks on how to use this product. Techniques such as shading, cleaning and the use of cornstarch will all be talked about in class, as well as wiring your completed flowers.

By the end of the afternoon, you will walk away with your own starter kit including:

                                                                 ~ 5 of Rosanne's favorite specialty, high end brushes

                                                                 ~A pack of 10 Sugar Art colors

                                                                 ~ A great container to hold your fabulous colored sugar flowers!

What's the Difference between Macaroon & Macaron?

French Macaron 101
Featuring Kari McGonigal, bakery apprentice (and Macaron guru) at Whisk Cake Co.

Skill Level: Beginner

This fun and exciting class is for anyone that is interested in learning how to create the newest trend in the sweets industry- the French Macaron!

In class, we will learn the history of the French Macaron, and what the difference is between it, and its not-so-pretty looking counterpart, the Macaroon! Chef Kari will guide you from the start to finish on the proper ways of mixing, coloring, piping and the little techniques needed during the baking process to create the perfect Macaron. Different filling and flavor options will be touched on before creating 20 (or more) macarons that you will be able to take home!

By the end of class, you will have 20 (or more) French Macarons, a 1 lb bag of Almond flour for future baking, and a Whisk Cake Company Pinstripe Apron, along with Chef Kari's tried and true recipes!
